I took this recipe from Taste of Home & revised it to make it vegetarian.
Ingredients:
1 onion, diced
1 bell pepper, diced
3 cloves garlic, minced
3 c. vegetable broth
2 cans black beans, rinsed
1 (15 oz) can pumpkin
1 can diced tomatoes
2 t. parsley
2 t. chili powder
1 1/2 t. oregano
1 1/2 t. cumin
Salt & Pepper
Throw everything in the crock pot & cook on low for 4-5 hours.
