Thank you Paula Deen for helping me consume the large quantities of cucumbers and tomatoes from my garden! You can eat this salad immediately, or make it ahead of time.
Ingredients:
2 cucumbers, peeled & thinly sliced
1 pint cherry tomatoes, halved
1/2 onion, (any sweet white variety)
2 T. fresh parsley, chopped
2 T. apple cider vinegar
1 T. evoo
Salt & pepper
