I don't know about you, but whenever the weather starts to cool off a
little I crave two things: soup and anything with pumpkin. These
waffles are perfect for a cool autumn morning. My family gobbled them
up!
Dry Ingredients:
1 1/2 c. whole wheat flour
1 c. all purpose flour
4 t. baking powder
2 t. cinnamon
1 t. ginger
1/2 t. salt
1/4 c. brown sugar
Wet Ingredients:
2 c. milk
1 c. pumpkin
4 eggs
1 t. vanilla
Directions:
1. Preheat waffle iron.
2. In a large bowl combine dry ingredients.
3. In a smaller bowl, beat wet ingredients. Add wet to dry and mix until incorporated.
4. Cook until crispy and golden brown. Serve with pure maple syrup.
